Each key from 2 to 9 holds 3 or 4 letters. Press once for the first letter on that key, twice for the second, three times for the third. So "22" gives you B, and "222" gives you C.
Without a separator, you couldn't tell where one letter ends: "222" could mean C (222) or B followed by 2 (22-2). The dash between each letter removes all ambiguity, making decoding reliable even for a kid.
